Spinach Parmigiano-Reggiano Cream Sauce Pizza with Sausage and Mozzarella

Spinach Parmigiano-Reggiano Cream Sauce Pizza with Sausage and Mozzarella: Directions:
1. Preheat oven to 500°F (260°C) with a pizza stone or steel inside for at least 30 minutes.
2. Make the spinach Parmigiano-Reggiano cream sauce: in a skillet, sauté 1–2 cloves minced garlic in 1 tbsp olive oil until fragrant. Add 6–8 oz fresh spinach and cook until wilted. Stir in 3/4–1 cup heavy cream, simmer gently 3–5 minutes until slightly reduced. Remove from heat and stir in 1/2–3/4 cup finely grated Parmigiano-Reggiano; season with salt and black pepper. Let cool slightly.
3. Cook the sausage: crumble and brown bulk Italian sausage in a skillet over medium heat, 6–8 minutes, breaking into bite-sized pieces. Drain excess fat and keep warm.
4. Assemble the pizza: stretch or roll the sourdough crust to desired thickness on a lightly floured peel. Spread an even, thin layer of the spinach-Parmesan cream over the dough (don’t overload). Arrange sliced mozzarella evenly, sprinkle cooked sausage, then dot with torn fresh mozzarella pieces.
5. Bake: slide pizza onto the preheated stone/steel and bake 8–12 minutes, rotating halfway, until crust is golden and cheese is bubbly. If desired, broil 30–60 seconds for extra browning.
6. Finish and serve: remove, let rest 2–3 minutes. Grate additional Parmigiano-Reggiano over the top, add a drizzle of olive oil or cracked black pepper to taste, slice, and serve.
