Baker’s percent: Flour 100 percent Water 69 percent Salt 2.3 percent Oil 2 percent IDY 0.08 percent Flour options: Use Bob’s Red Mill Artisan Bread Flour or King Arthur Bread Flour. King Arthur is a bit stronger and easier to handle. Bob’s is slightly softer with great flavor. Bottom line: This dough is a little tacky and takes some feel but the result is a light airy pizza with a crispy bottom and a much better overall texture.
