For the Cake:

Combine flour, baking powder, and salt in a bowl and whisk to combine.

Mix yolks with 3/4 of the sugar and beat until pale yellow, then add milk and vanilla.

Add the wet yolk mixture to the dry flour mixture and mix, but don’t overmix.

Beat egg whites until soft peaks form, then add the rest of the sugar and continue beating until stiff peaks form.

Add egg whites to the batter and fold in gently.

Grease a tray and bake at 350°F for 30-40 minutes or until a toothpick inserted in the middle of the cake comes out dry.

For the Milk Mixture:

Combine all three milks in a bowl and whisk to combine.

Once the cake has cooled, poke holes in it and pour the milk mixture over it, saving some for plating.

Cover the cake and chill for at least 2 hours or overnight.

For the Whipped Cream:

Combine cream and sugar and whip until stiff peaks form.
