Reference one of my pizza dough recipes if needed. Cut doughball into 12-16 pieces. The pieces should weigh 30-35g.

Roll each into a ball and poke a small hole in the middle. The hole is technically optional since you are topping it anyway.

Place each mini bagel on a small square of parchment paper.

Cover with a lid or plastic wrap and let it rise on the counter for about an hour.

Boil 6 cups of water. Once boiling, add a tablespoon of honey.

Drop 2-3 bagels in the water at a time, with the parchment paper. The paper will come off. Boil each side for about 30 seconds and remove.

Place the lightly boiled bagels on a baking sheet.

Create some egg wash with one egg and a tablespoon of water. Then brush on each bagel.

Put into an oven at 400 degrees for 15 minutes or until golden brown.

Remove. Let cool. Then cut each bagel in half.

Top each half with sauce, pecorino, cheese and pepperoni.

Bake in the oven for another 8-10 minutes or until the top looks as desired.
