Tip: If the chocolate starts to harden or turn grainy, it has likely seized. This can happen if water gets into the chocolate or if the heat is too high. For silky, smooth chocolate, keep all water away from the bowl and melt the chocolate slowly with steam. Tip: One of the biggest mistakes people make when coloring chocolate is adding a water based food coloring to their chocolate. Water based dyes will immediately cause your chocolate to seize and harden leaving you with a thick, chunky, and uneven texture. Tip: For easy transfer, place the piping bag inside a cup. Open the bag and fold the edges over the rim of the cup, then pour the softened ice cream directly into the bag. Tip: You may need to apply a bit of pressure to release the pieces, but don’t worry—they should be fully set and sturdy. I find it helpful to pull back one side of the mold first while slowly popping the other side out from the bottom. If the chocolate is breaking this means they haven’t been left long enough to freeze. I was able to pop each fruit out easily after they were left to freeze for 5+ hours. Tip: Make sure the chocolate is semi cool when using it as a glue to avoid melting each pre frozen piece.
