Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

For the Flax Eggs:

In a small bowl, combine 2 tbs flax meal with 5 tbs water. Stir and let sit for about 5 minutes to thicken.

In a large mixing bowl, whisk together the flour, matcha powder, baking soda, baking powder, and salt.

In another bowl, mix the light brown sugar, granulated monk fruit sweetener, melted vegan butter, and vanilla bean paste until well combined.

Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
