Directions

For the Potatoes

Add the potatoes to a large bowl and add oil, salt and pepper, onion and garlic powder, and smoked paprika; mix well and spread on a baking sheet.

Roast the potatoes at 425F for 30 minutes.

For the Broccoli

Add the broccoli to a large bowl and add oil, salt, and pepper; mix well and roast or air fry at 400-425F for 20 minutes.

For the Tofu

Press the tofu and tear into large chunks.

Add into a bowl with oil, salt and pepper, onion and garlic powder, smoked paprika, cayenne pepper, ground cumin, and dried oregano; mix well.

Heat a nonstick pan on high heat and add 3 tbs oil; sear and fry the tofu for 5-10 minutes until golden brown and edges are crispy.
