1 block firm tofu

1 heaped tbsp cornstarch

For the sweet n sour sauce

3 tbsp banana ketchup (or normal ketchup)

2 tbsp maple/agave syrup

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp sesame oil

1 clove minced garlic

1 thumb piece minced ginger

1 tbsp sriracha or any chilli sauce

2 tsp cornstarch with 2 tbsp water

Sesame seeds and spring onions for topping
Directions

Start by tearing your tofu into little chunks. In a bowl add the salt and pepper and heaped tbsp corn starch. Add to the oven or air fryer for 15 mins at 200C. You can spray with oil for more of a golden texture.

For the sweet n sour sauce

Add a little bit of oil to a pan, cook off the minced garlic and ginger for a minute. Then add the rest of the ingredients for the sweet and sour apart from the corn starch slurry.

After a few minutes add the corn starch slurry, cook for a minute or two until it thickens and then turn off the heat.

Add the sauce to a bowl and toss the tofu nuggets in the sauce to coat. Serve with sesame seeds and spring onions and enjoy!!
