Vegan burrata & grilled veg ciabatta

Ingredients

1 cup cashews

c

2 tbsp cornstarch

1 tbsp nutritional yeast

3 cups oat milk

o

1 tbsp olive oil

c

1 tsp citric acid or juice of half a lemon

Salt

100 g vegan cream cheese

v

100 g vegan cream (oat or soy)

Ciabatta loaf

b

1 beef tomato

Fresh rocket/arugula

Grilled antipasti vegetables (artichoke, peppers, zucchini etc)

Directions

To make the mozzarella blend all the ingredients together then cook in a pot until very thick.

Spoon the mixture in a bowl of ice water to form mozzarella balls.

Leave them to cool for a few hours.

Mix the vegan cream cheese and cream together then tear in the mozzarella. Season with salt and set aside.

Slice your tomatoes and season with salt, pepper and olive oil.

To make the sandwich toast the ciabatta and add your vegan burrata mix.

Add the grilled veg, then tomatoes then arugula. Squeeze over some fresh lemon and ENJOY!
