Date, Banana & Burrata Toast

2 servings

Ingredients

F

For the Date Banana Spread:

M

4 Medjool dates, pitted and thinly sliced into rings

l

1 large ripe banana, sliced

u

1 tablespoon unsalted butter

r

1 tablespoon roasted unsalted walnuts

w

1 tablespoon water (optional, if mixture gets too dry)

g

½ teaspoon ground cinnamon

F

For Assembly:

c

2 slices country style sourdough bread

o

1 (4 oz) ball of burrata cheese

r

2 tablespoons roasted unsalted walnuts, roughly chopped

f

1 teaspoon fresh thyme leaves

e

1 tablespoon extra virgin olive oil

o

pinch of kosher salt

Directions

1

Make the Date-Banana Spread:

1

In a medium skillet over medium heat, melt the butter.

2

Add the sliced banana and dates. Sprinkle with cinnamon and stir to combine.

3

Cook for 6-8 minutes, stirring frequently, until the fruit is softened and caramelized. If the mixture starts to stick or dry out, add 1 tablespoon of water to loosen it up.

4

Stir in 1 tablespoon of walnuts and remove from heat.

5

Assemble the Toasts:

1

Lightly toast the bread slices to your liking.

2

Spread the warm date-banana mixture generously over each slice.

3

Tear the burrata in half and place one half on each toast.

4

Sprinkle with a pinch of salt.

5

In a small bowl, mix the olive oil with the thyme leaves. Drizzle over the burrata.

6

Top with the chopped walnuts.

7

Serve immediately while warm.

Notes

This recipe uses 4 Medjool dates for a rich & sweet flavor. If you prefer a slightly less sweet spread, feel free to reduce to 3 dates instead.
