2 slices country style sourdough bread

1 (4 oz) ball of burrata cheese

2 tablespoons roasted unsalted walnuts, roughly chopped

1 teaspoon fresh thyme leaves

1 tablespoon extra virgin olive oil

pinch of kosher salt

Make the Date-Banana Spread:

In a medium skillet over medium heat, melt the butter.

Add the sliced banana and dates. Sprinkle with cinnamon and stir to combine.

Cook for 6-8 minutes, stirring frequently, until the fruit is softened and caramelized. If the mixture starts to stick or dry out, add 1 tablespoon of water to loosen it up.

Stir in 1 tablespoon of walnuts and remove from heat.

Assemble the Toasts:

Lightly toast the bread slices to your liking.

Spread the warm date-banana mixture generously over each slice.

Tear the burrata in half and place one half on each toast.

Sprinkle with a pinch of salt.

In a small bowl, mix the olive oil with the thyme leaves. Drizzle over the burrata.

Top with the chopped walnuts.
