Cassava Fries | YUCA FRITA

Ingredients

1 kg frozen Cassava root (raw)

Salt

Neutral oil

Dipping sauce suggested : Avocado sauce (Guasacaca)

Directions

Add frozen raw Cassava root to a big pot and cover with cold water and 1 tbsp of salt

Bring to boil, let cook for around 15min or until they are fork tender but still firm

Drain the cassava and let it cool until you can handle it

Split root in half and with a knife or skewer remove the white hardy vein in the middle

Cut in batons of about 5 cm long and 1 cm thick

Let them cool down in the fridge for around 30 min (you can freeze as well for later use)

Heat up some abundant oil to 180C and fry the cassava fries in batches until they are golden and crispy

Season with flaky salt

Serve with chili oil (optional) and dipping sauce of preference
