Ingredients

Lamb Meatballs:

1 lb ground lamb

1 tsp of each salt, garlic & onion powder, paprika, oregano, thyme

½ tsp black pepper

1 egg

⅓ cup panko breadcrumbs

Tzatziki:

1 cup Greek yogurt

1 cucumber, grated and squeezed dry *(I keep a little of the liquid for flavor)*

1 garlic clove, minced

½ Juice of lemon

1 tbsp olive oil

Splash of red wine vinegar (optional, to taste)

1 tbsp fresh dill, chopped

pinch of salt + black pepper

Mediterranean Salad

2 roma tomatoes, diced

1 cucumber, diced

s

½ small red onion, thinly sliced

2 tbsp olive oil

Freshly chopped dill

L

Lemon juice, to taste

Salt + pepper, to taste

Directions

Preheat oven to 400°F. In a large bowl, mix together ground lamb, spices, egg, and panko until just combined. Roll into meatballs (about 1 ½ tablespoons each) and place on a parchment-lined baking sheet. Bake 18–20 minutes, until browned and cooked through.

In a bowl, stir together yogurt, grated cucumber, garlic, lemon juice, olive oil, red wine vinegar (if using), dill, salt, and pepper. Chill until serving.

Combine tomatoes, cucumber, and onion in a bowl. Drizzle with olive oil, lemon juice, and season with dill, salt, and pepper. Toss gently.

Plate the lamb meatballs with a scoop of tzatziki and a side of Mediterranean salad. Add warm pita or rice on the side if you’d like. Enjoy!
