2 large sweet potatoes (cut in half lenghtwise)

4 tbsp low sodium soy sauce

Pre-heat oven to 400 degrees. Begin by washing and drying the sweet potatoes. Cut in half lengthwise.

Spray the sweet potatoes with avocado spray. Sprinkle salt and pepper all over the potatoes. Place them face down on a baking sheet pan. Bake in the oven at 400 degrees for 30-35 minutes.

While that's baking, using a medium size skillet on medium/high heat. Spray the skillet with avocado spray. First add the minced garlic, allow to cook for a minute or two before it begins to turn brown. Then add the pack of pre-cut veggies to the pan. Allow them to cook down a bit. Finally add the ground beef. Break it up using a spoon. Sprinkle some salt and pepper and garlic powder.

In a small mixing bowl combine soy sauce, honey and red chili flakes. Then add it back to the ground beef mixture. Cook until sauce becomes a little bit thicker and beef is fully cooked.

To serve I removed the sweet potatoes from the oven, smash them up using a fork. Place a spoon full of the beef and peppers mix. Finish it off with a dollop of plain greek yogurt. Tastes just like sour cream :) ENJOY!
