About the Corn Starch: The corn starch acts as an egg replacement - it helps thicken and bind the batter while making the pancakes extra fluffy. You can omit it if you don't have any, but I do recommend it for the best texture. When I make these I sometimes forget to add corn starch and I'm never disappointed, so it's up to you. Why water, not milk? I have experimented with this recipe many, many times over the years. Sometimes I use water, sometimes I use non-dairy milk. It truly seems to make no difference. Yay, saving money! For Buttermilk Pancakes: Want that classic buttermilk tang? Add 1 tbsp of vinegar or lemon juice to your non-dairy milk and let it sit for 15 minutes to curdle before adding it to the recipe. It works perfectly! Crepe Variation: You can easily transform this recipe into crepes! 1. Increase corn starch to 1 1/2 tbsp total 2. Add more milk until the batter is liquidy (think thin smoothie consistency) 3. Important: Let the batter rest for at least 15 minutes before cooking. This allows the flour to fully hydrate and makes for perfectly thin, tender crepes.
