Rinse the beef tongue thoroughly in a container under cold water with distilled vinegar and lime wedges until the water runs clear.

In a large Dutch oven or pot, add the chicken broth, water, and beer (if using).

Add the onion, garlic, bay leaves, oregano, black peppercorns, rosemary, thyme, and guajillo peppers. Season lightly with salt.

For the Cook the Tongue

Place the cleaned beef tongue into the pot, making sure it is mostly submerged in the liquid.

Bring to a gentle simmer over medium heat, then reduce to low heat. Cover and cook for 4 to 5 hours, or until the tongue is very tender and easily pierced with a knife.

For the Peel the Tongue

Remove the tongue from the pot and let it cool slightly.

While still warm, peel off the outer layer of skin, it should come off easily.

Slice or chop the beef tongue into small bite sized pieces, depending on your preference.

Heat a skillet over medium-high heat and add a little oil.

Add the chopped lengua and sear for a few minutes until the edges become slightly crispy and golden. This step adds texture and enhances flavor.

Warm your tortillas, then fill them with the crispy beef tongue.
