1 block defrosted, thawed and pressed tofu

2 cups vegan chicken stock

1 cup flour

1 tbsp potato or corn starch

1 tsp salt

1 tsp pepper

1 cup golden breadcrumbs

Oil for frying
Directions

Cut your tofu into lengths.

Soak in chicken stock for a few minutes.

Set up your dredging station, mix your flour with potato starch, salt, and pepper.

Dip your tofu into the flour.

Dip back into the chicken stock.

Cover in breadcrumbs.

Heat oil to 180c and fry the schnitzel for a couple of minutes on each side until golden brown.
