13 ½ 1.5lbs lean ground beef

3 red potatoes

2 zucchini

1 whole onion (half diced for the meat and the other to boil for sauce)

2 Roma tomatoes

3 chili de arbol peppers

3 guajillo peppers

1 tbsp minced garlic

1 tsp cumin

Salt & pepper to taste

2 tsp chicken bullion

1 - 2 cups reserved water from sauce
Directions

Start by boiling your water and adding tomatoes, half an onion, and peppers. Remove and place in blender along with chicken bullion, garlic and pepper. Allow to cool before blending! Once cooled blend and set aside.

Brown ground beef and add in half the other onion, salt and pepper. Once cooked add in your potatoes, sauce and 1-2 cups of reserved water.

Cover and turn the heat down to low. Allow to cook for 10 minutes or until potatoes are fork tender.

Add zucchini, cover and allow to cook another 5 minutes until they become soft. Once done portion out evenly into 5 containers, about 1 & 1/2 cups in each container. Top with cilantro and enjoy
