Truffle Courgette Shoestring Fries

Ingredients

1 large courgette

100 g corn flour

100 g plain flour

400 ml sparkling water

1 tsp salt

1 tbsp truffle dust (I used @truffleguys )

Optional : veg Parmesan, fresh parsley

Directions

Start by thinly slicing your courgette into long strips and then into thin fry shapes.

Get them in a bowl with a tsp salt and toss to coat, let sit for 5 minutes to draw out the moisture.

Mix together the carbonated water with the flours until combined in one bowl. In a separate bowl add 100g plain flour with salt.

Pat dry your courgette from any liquid then get the fries into the dry batter the three batter and then fry in hot frying oil for around 2-3 mins until golden and crispy, then place on a drying rack.

Once you’ve cooked all the fries, add them to a bowl, toss in more salt and the truffle dust. Serve up with Parmesan and parsley and tuck in!!
