Marmite Mushrooms on Toast

Ingredients

300 g mixed wild mushrooms

2 cloves garlic

1 tsp marmite

s

1 tsp soy sauce

1 tsp date syrup

1 tsp rice vinegar

2 tsp date/agave syrup

1 tbsp butter

Glug of olive oil

Extra bits: Kale, bread, butter, feta, chives

Directions

Start by heating up your oil and butter over a medium heat. Add in the mushrooms, season and let cook for 2-3 minutes until reduced.

Make your marmite glaze. Add in your garlic to the mushrooms, fry for 30 seconds and then pour in the glaze. Cook for another few minutes until sticky and caramelized.

Set the mushrooms aside and in the same pan add in the kale with a splash of water. Cover with a lid and steam for a few minutes.

Toast and butter your bread, crumble on some feta, top with the kale and the mushrooms and finish with some chives and enjoy!!
