2 ½ cups Cucumber (chopped)

1 cup Edamame

1 ½ Avocado (cubed)

3 Green onion (chopped)

2 ½ tbsp Mayonaise (kewpie)

1 tbsp Sriracha

1 tbsp Sesame oil

2 tsp Rice vinegar

½ tbsp Soy sauce

Finish with:

½ tbsp Sesame seeds

2 cups Cooked white rice

1 pack Organic roasted seaweed snack by Kirkland Signature
Directions

Prep your Spam. Pat dry and cut into cubes.

Heat up pan (med/high) and fry Spam for 2-3min.

Add in soy sauce, mirin, and sugar. Mix and fry Spam until sugar caramelizes and edges become crispy.

Remove heat and let cool.

In a container add cucumber, edamame, green onion, avocado, mayo, sriracha, sesame oil, rice vinegar, soy and sauce. Cover and shake well.

Serve over cooked jasmine rice and top with Spam, sesame seeds, and crushed seaweed.

Serve with seaweed snacks.
