Creamy Zucchini Sausage Pasta

Ingredients

olive oil

1 lb ground italian sausage

2 whole zucchini, sliced then halved

12 oz lumaconi pasta

o

½ onion, diced

1 tbsp garlic, minced

3 tbsp tomato paste

¼ cup vodka

2 cup heavy cream

2 tsp italian seasoning

½ tsp red pepper flakes (1/4 tsp if you don't like it spicy)

½ cup reserved pasta water

2 tbsp butter

¾ cup pecorino romano, grated

salt and pepper, to taste

Directions

Add a splash of olive oil to a skillet over medium heat.

Once hot, add in zucchini skillet and cook, stirring occasionally for about 5 minutes (the zucchini should be lightly browned on both sides). Season with salt and pepper and set aside.

Add a splash of olive oil to a separate large sauce pan over medium heat.

Once hot, add in sausage. Crumble and brown until cooked through. Drain and set aside.

Bring a large pot of salted water to a boil. Cook pasta 2 minutes less than al dente according to box directions.

Add another small splash of olive oil to the same sauce pan as the sausage over medium-low heat.

Once hot, add in the onion and season with salt and pepper. Cook until fragrant and translucent.

Stir in the garlic and cook for an additional 30 seconds.

Next, add in the tomato paste and stir until incorporated. Let this cook for a minute or two.

Pour in the vodka and mix until combined.

Stir in the heavy cream.

Season with spices.

Turn heat to low and bring to a light simmer.

Add in the reserved pasta water, sausage, zucchini, and pasta. Stir until combined.

Mix in the butter and pecorino romano.

Continue to cook on low until pasta is al dente (if the sauce gets too thick, add in extra pasta water or heavy cream).

Serve immediately and enjoy!
