3 tablespoons butter

1 large onion, sliced

8 oz mushrooms, sliced (optional)

4 cloves garlic, minced

3 tablespoons flour

2 ½ cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon soy sauce

¾ teaspoon black pepper

¾ teaspoon onion powder

½ teaspoon sugar

1 tablespoon butter, cold (for finishing)

Directions

In a large bowl combine the ground beef, Worcestershire sauce, ketchup, Dijon mustard, diced onion, garlic, egg, breadcrumbs, salt, black pepper, onion powder, garlic powder, and smoked paprika.

Mix gently until just combined.

Form the mixture into 6 oval patties, pressing a slight indent into the center so they cook evenly.

Heat oil in a large skillet or cast iron pan over medium-high heat.

Sear the patties for 3–4 minutes per side until well browned. Work in batches if necessary. Remove the patties and set aside.

In the same skillet add butter, sliced onions, and mushrooms.

Cook over medium heat for 8–10 minutes until the onions soften and begin to caramelize.

Add the garlic and cook for about 30 seconds.

Sprinkle the flour over the onions and stir well. Cook for 1 minute to remove the raw flour taste.

Slowly pour in the beef broth while stirring to create a smooth gravy.

Bring the gravy to a gentle simmer.

Return the patties to the skillet along with any juices.

Spoon gravy over the patties, cover, and simmer for 12–15 minutes until the patties are fully cooked and tender.

Right before serving stir in 1 tablespoon cold butter to finish the gravy and give it a glossy texture.
