Ingredients

2 cups Einkorn flour

1 tsp baking soda

½ tsp salt

¾ cup coconut sugar

¼ cup granulated monk fruit sweetner

¾ cup vegan butter, softened

2 tsp vanilla extract

1 flax egg (1 tbs flaxmeal + 2.5 tbs water)

¼ cup unsweetened almond milk

½ cup dark chocolate chips

½ cup semi sweet chocolate chips

Directions

Make the flax egg by mixing 1 tbs flaxmeal with 2.5 tbs water.

Combine the Einkorn flour, baking soda, and salt.

Mix the coconut sugar, granulated monk fruit sweetner, softened vegan butter, and vanilla extract.

Add the flax egg and unsweetened almond milk.

Add the dry ingredients to the wet ingredients and mix to combine.

Stir in the dark chocolate chips and semi sweet chocolate chips.

Cover a chill cookies in the refrigerator for atleast 1 hour.

Bake the cookies.

Let cool for 10 minutes in the pan then transfer to wire rack.
