For the Make the Jerk Marinade

Into a Blender or food processor add scallions,a white onion, ginger, garlic, scotch bonnet or habanero peppers, thyme, rosemary, lime juiced, browning, allspice, brown sugar, black peppercorn, soy sauce, and olive oil.

For the Marinate the Salmon

Pat the salmon dry and remove skin if necessary, then slice it into large bite sized cubes.

For the Salmon

Toss the salmon generously with the jerk marinade until every piece is coated. Cover and let it marinate for at least 20–30 minutes preferably overnight.

For the Prepare the Mango Salsa

While the salmon marinades, make the fresh mango salsa. Dice the ripe mango into small cubes.

Mango Salsa :

1 Large Ripe Mango, diced (3 Cups) or substitute for pineapple

Add the diced red onion and red bell pepper for crunch and color. Sprinkle in freshly chopped cilantro, squeeze fresh lime juice over everything, and season lightly with salt. Finish with a small drizzle of olive oil to bring it together.

Refrigerate until ready to serve (Good for up to 48 Hours). The flavors will meld as it rests.

For the Cook the Cilantro-Lime Rice

Rinse the Calrose rice (or any rice) under cold water until the water runs clear. This removes excess starch and gives you that fluffy texture.

Combine the rice and water in a pot (or rice cooker) and bring to a boil. Once boiling, reduce the heat to low, cover, and let it cook undisturbed for about 15 minutes.

Cilantro Lime Rice (Makes 3 1/2 Cups) :

Remove from heat and let it steam, still covered, for another 10 minutes. Fluff with a fork, then stir in fresh lime juice, chopped cilantro, and salt. Keep warm until ready to build your bowl.

For the Cook the Jerk Salmon

Preheat your oven to 400°F and line a baking sheet with parchment paper.

Spread the marinated salmon pieces out in a single layer, giving them a little space so they roast instead of steam. Bake for about 10 minutes, or until the salmon is just cooked through.

Switch the oven to broil and cook for an additional 1–2 minutes for color.

Air fryer option: Cook at 400°F for 7–9 minutes until cooked through.
