½ bulb fennel, thinly sliced

1 tbsp olive oil

½ tsp rosemary

Salt and pepper

Directions

Preheat oven to 400°F.

Toss fennel in oil and herbs. Roast alongside seasoned chicken thighs for 30–35 minutes or until internal temp of chicken is 165F
