Pat chicken dry, salt well, let sit 10–15 min. Pat dry again.

Sear in olive oil over high heat until deeply golden and crispy on both sides. Leave crisping while we make the sauce.

For the Sauce:

In separate pan add coconut milk, Calabrian chili, soy sauce, honey, and lime juice. Simmer until slightly reduced.

(Optional) Add a little cornstarch slurry to thicken. And if you really must cheat throw in a touch of heavy cream.

Coat the chicken in sauce.

Finish with extra lime + spoon that sauce everywhere. Could add herbs like basil or cilantro to the top if you want some color pop.
