Pre heat your oven to 400 degrees F. Using large sweet potatoes, dice them into 4ths. To a lined baking dish, spray avocado oil and season heavily with salt, pepper and the kinders seasoning blend. Place face down, spray the top with avocado oil and bake for 30-35 minutes until they are fork tender

Heat a large skillet with avocado spray and add in your ground beef. Cook until brown, add in your taco seasoning pack and 1/3 cup water

To a blender add your Greek yogurt, cottage cheese, lime and seasonings. Blend until smooth

Heat your corn in a skillet or microwave, add to a bowl with your Greek yogurt sauce and mix. Add tajin (optional)

Assemble your meal prep containers by adding two pieces of sweet potatoes (half of one) 1 cup cooked ground beef, 1/2 cup of corn mixture. Top with cotija cheese and cilantro
