Garlic Cheese Bread

Ingredients

1 - 2 tbsp Minced Garlic

1 tbsp Chopped Parsley

½ stick of Butter

1 ½ cup Whole Shredded Mozzarella Cheese

1 cup Part Skim Shredded Mozzarella Cheese

½ cup Shredded Cheddar Cheese

S

½ cup Shredded Monterey Jack Cheese

Dough Recipe

285 g Bread Flour

200 g Room Temp Water

6 g Salt (2%)

3 g Sugar (1%)

8 g Olive Oil (2.5%)

0.85 g Instant Yeast (0.3%)

Directions

Par bake dough in cast iron skillet at 500 degrees for 10 mins.

Once you have your par baked dough, add parsley and garlic to softened butter and mix.

1 - 2 tbsp Minced Garlic

½ stick of Butter

Spread butter mix all the way to the edges of your dough

Top with Whole Milk Mozzarella in the center of the dough and Part Skim Mozzarella on the edges. Spinkle the shredded Cheddar and Monterey Jack throughout.

½ cup Shredded Cheddar Cheese

½ cup Shredded Monterey Jack Cheese

Bake in the oven at 500 degrees for 8 mins. Let sit for an additional 3-5 mins before removing from the pan.

Slice and serve!

Dough Recipe

Mix until everything comes together then rest for 30 minutes.

Stretch over itself at least 4 times to build tension and cover again for 30 minutes (google 'slap and folds').

Check if it passes the window pane test and repeat as needed.

Press into the pan to the edges and cover for 1 hour.

Dimple evenly into the pan and cover for 3-5 hours.

Notes

For the Dough: I prefer 2-3 day cold fermentation to build flavor. On the day of making pizza, I’ll take it out of the fridge an hour before pressing into the pan the first time. Also, you don’t need a steel in the oven. I just happen to never take mine out.
