For the Rice:

1 rice cooker cup basmati rice, washed

2 rice cooker cups bone broth

4 tsp lemon pepper seasoning (I used Siete Foods seasoning)

2 boneless, skinless chicken thighs (4oz each)

1 small cucumber, thinly sliced

¾ cup whole milk Greek yogurt

3 tbsp dill, finely chopped

3 tbsp parsley, finely chopped

Prepare the Rice:

Add washed rice and bone broth to a rice cooker. I always add slightly lesser than 2 Cups, around 1 ¾ rice cooker cup of Bone Broth (for the perfect cooked rice texture).

Cook while you prepare the chicken and cucumbers.

Cook the Chicken:

Preheat air fryer to 380ºF (let it run for 3–5 mins if no preheat setting).

Pat chicken dry and season both sides generously with the seasoning blend.

Place chicken in the air fryer, flat side up. Spray the top with oil.

Cook at 380ºF for 12 minutes, then flip, spray again with oil, and cook for 3–5 more minutes.

Remove and rest for at least 5 minutes before slicing. (This ensures super moist chicken)

Make the Tzatziki Cucumbers:

In a bowl, combine sliced cucumbers, yogurt, dill, parsley, garlic, lemon zest, lemon juice, salt to taste (I added ½ tsp Sea Salt), and olive oil.

Mix well and set aside.

Plate ¼ of the cooked rice, ½ of the tzatziki cucumbers, and all of the sliced chicken.

Optionally drizzle some plain yogurt sauce (without cucumbers) over the chicken.
