Ingredients

For the gravy base:

o

1 onion

3 cloves garlic

250 g chestnut mushrooms

1 tbsp butter

Glug of olive oil

4 sausages

1 sprig of rosemary

1 sprig of thyme

2 tbsp plain flour

250 ml veg stock

1 tsp marmite

2 tbsp brown sauce

1 tbsp red wine vinegar

For the creamy mash:

2 large Mari’s piper potato

b

3 tbsp butter

l

2 large handfuls cheese

½ tsp Dijon mustard

2 tbsp oat milk

Directions

Start by adding your butter and olive oil to a pan over medium heat. Add in your onions, season with salt and pepper and fry for around 15 mins until caramelized, stirring constantly.

Add in your sausages and fry for a few minutes just to caremlize them then set them aside.

Add your peeled and chopped potatoes to some salted boiling water and cook until soft and crumbly (around 15 mins).

Add your mushrooms to the onion mix with the rosemary and thyme, fry for a couple of minutes before adding in the garlic, fry for another 30 seconds.

Add in the flour and stir, then gradually add in the stock until the mixture thickens into a gravy like consistency.

Now go in with the marmite, brown sauce and vinegar and cook for a few more minutes then turn off the heat.

Once your potatoes are cooked, drain them then push them through a potato ricer or mash them until there are no lumps.

Add in the butter, mustard and cheese and fold together. Then slowly add them milk and whip it together until creamy. Season with salt and pepper.

Get some ramekins, spoon in your onion gravy, top with some of the mash and then poke in your sausages from earlier. Spray the mash with some oil then add to the oven for around 10 mins at 210C until caramelized. Dig in and enjoy!!
