1. The 60-minute salt "sweat" is mandatory. For a sandwich-style eggplant parm, any excess water will result in a soggy baguette. 2. The sauce should be "jammy" and thick. If it appears watery after 20 minutes of simmering, continue to reduce it for another 5-10 minutes. 3. Add the arugula only at the moment of serving. Placing it on boiling-hot eggplant will cause the greens to wilt and turn bitter.
