Notes

The dough yields 4 pizza sandwich breads, but the filling is enough for about 2 generously stuffed sandwiches. For homemade basil pesto, bring a medium pot of water to a boil. Prepare a bowl of ice water nearby. Add 3 packed cups basil leaves and 1 packed cup spinach to the boiling water and blanch for 15 to 20 seconds. Transfer immediately to the ice water and let cool for 1 to 2 minutes. Drain well, then squeeze out as much excess liquid as possible. Transfer the greens to a tall container suitable for an immersion blender (or use a small food processor). Add 3 tbsp toasted pine nuts (or pistachios), ⅓ cup grated Parmigiano-Reggiano, ⅓ cup extra virgin olive oil, and 1 small garlic clove. Blend until smooth. Taste and season with salt as needed.
