Directions

Saute your vegetables in olive oil over a medium heat, until soft.

Add your spiced to the veg, cook over a medium heat for a couple minutes or until fragrant.

Add in your washed rice and cover with your chicken stock.

1 litre chicken stock

Season with salt, pepper and fresh lemon juice.

Turn the heat right down, cook over a very low heat for 15 minutes.

Take your rice off the heat, leave it to sit with the lid on for a further 10-15 minutes.
