Peanut Chicken Salad

Ingredients

2 ½ cups Chicken breast (chopped)

3 cups Cabbage (chopped)

½ Cucumber (chopped)

3 Green onion (chopped)

1 ½ cups Carrots (grated)

1 Ambrosia apple (chopped)

1 tbsp Sesame seeds

¼ cup Peanuts (crushed)

Sauce:

2 ½ tbsp Soy sauce

P

2 ½ tbsp Peanut butter (smooth)

½ lemon (juiced)

1 ½ tbsp Honey

2 cloves Garlic (minced)

½ tbsp Sesame oil

2 tbsp Rice vinegar

½ tbsp Sriracha

Directions

Start by prepping all of your veggies and chicken.

Make your sauce. Mix and set aside.

Add all of your veggies and chicken to a salad bowl.

Pour on your desired amount of sauce.

Mix well and top with sesame seeds and peanuts.

Serve with rice crackers or seaweed
