In a large mixing bowl, cream together butter and sugar on medium speed until light and fluffy.

While the butter is creaming, mash the banana in a small bowl until smooth.

In another bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

Add mashed banana, egg yolks, lime zest, vanilla, nutmeg, cinnamon and almond extract to the butter-sugar mixture. Mix on low speed until fully combined.

Slowly add the dry ingredients to the wet mixture. Mix until a soft dough forms.

Gently fold the whipped egg white into the dough to keep it airy and fluffy. Don’t overwork the dough—this keeps the donuts light and fluffy.

Dust your surface with flour. Roll out the dough to about ½-inch thick. Use a round cutter or glass to cut out circles. You can also shape them rustic-style with your hands.

Heat canola oil in a deep pan (about 350°F / 175°C). Fry the donuts in batches, about 2-3 minutes and flipping them occasionally until golden brown on all sides. Place on paper towels to drain excess oil.
