1 bag Maris Piper potatoes

Rapeseed oil

3 cloves garlic

2 sprigs rosemary

2 sprigs thyme

3 sage leaves

1 tbsp chilli salt

Directions

Start by chopping your potatoes up, but don't peel them. Boil and salt some water. Add your potatoes in and boil for between 12 & 15 mins.

Preheat the oven to 190C. Add a baking tray to the oven with a fair bit of rapeseed oil to heat it up.

Chop up finely all your herbs, or use a pestle and mortar and mix with the chili salt.

Once the potatoes are boiled, chuff them up so they get fluffy bits on them which will allow them to get crispy.

Add them to the oven for 50 mins, turning them every 10 mins.

In the last 10 mins, remove the oil, add the garlic and half of the Christmas herbs and salt, and toss.

Now you should have the crispiest potatoes. Top with vegan parmesan and some more Christmas salt and enjoy!
