Ingredients

For the Chicken

2 chicken breasts, butterflied and pounded thin, then cut in half

Salt and black pepper

2 tsp cornstarch

Neutral oil, for searing

For the Sauce

½ cup chicken stock

3 cloves garlic, finely grated

2 tsp Calabrian chili paste (to taste)

2 tsp honey

Kosher salt, to taste

1 tbsp cold butter

For the Lemony Tomatoes and Olives

1 cup cherry tomatoes, halved

¼ cup chopped olives (green or mixed)

½ Juice of lemon

2 tbsp extra virgin olive oil

Salt and black pepper, to taste

For the To Serve

Directions

Season the chicken with salt and pepper, then dust lightly with cornstarch on both sides.

Heat a drizzle of oil in a skillet over medium-high heat. Sear the chicken until golden on both sides and just about cooked through, 2–3 minutes per side.

While the chicken cooks, stir together the stock, grated garlic, Calabrian chili paste, and honey in a small bowl.

When the chicken is nearly done on the second side, pour in the sauce. Let it simmer and reduce around the chicken until slightly thickened, about 2–3 minutes.

Remove from heat and swirl in the cold butter until glossy. Taste and adjust seasoning with salt if needed. Garnish with chopped parsley if using.

Combine the cherry tomatoes, olives, lemon juice, olive oil, salt, and pepper in a bowl. Let sit for 5–10 minutes.

Serve the chicken with a lemon wedge and chopped parsley. Spoon the lemony tomato-olive salad on the side. Enjoy with your carb of choice—rice, roasted potatoes, or crusty bread all work beautifully.
