2 packs Udon Noodles

1 pack Firecracker Sauce or 1 tbsp gochujang paste

1 tbsp Soy sauce

1 can Coconut milk

6 stalks Tender stem Broccoli

3 Shallots

2 large cloves Garlic

Optional extras: sesame seeds, butter
Directions

Start by adding your tenderstem broccoli to a pan with oil and salt. Cook for 3/4 mins on a high heat, tossing every so often, until charred.

Boil some salted water and cook your noodles to packet instructions.

Once the broccoli is charred add in the soy sauce and cover with a lid and cook for another 2 mins, then go in with a tbsp water and cover again for another 2 mins. See the broccoli aside in a bowl and cover with a plate.

In the same pan fry off the shallot in 2 knobs of butter for 2 mins then go in with the garlic and fry for another minute.

Pour in the firecracker sauce and stir, then go in with your can of coconut milk. Bring that to a boil to thicken, then reduce the heat and add in the cooked noodles with a splash of the noodle water. Combine the noodles with the sauce and cook for another minute.

Plate up some of the sauce, top with the noodles and the broccoli and some sesame seeds if you have them laying around and enjoy!!
