4 lemons Lemon peel

For the Lemon Pepper Sauce:

1 tbsp Hot Sauce

3 - 4 tbsp Cold Unsalted Butter

For the Lemon Pepper:

Peel lemons but try not to get too much of the pith (white part underneath the skin).

Dehydrate lemon peel on lowest setting on oven for 1.5-2 hours or until dry.

Blend into a powder then mix with pepper and salt.

Prepare the Wings:

Add salt, cornstarch, paprika and garlic powder to wings. Mix then place on wire rack and into the fridge to dry out the skin for 1 hour to overnight.

For the Sauce:

Add lemon juice and hot sauce to a pan on medium heat then add some of your lemon pepper, garlic powder.

3 - 4 tbsp Cold Unsalted Butter

Once heated and mixed add your cold butter. Mix until melted and completely combined.

Place to the side on low heat and add a little water if it becomes too dry.

Fry the Wings:

Fry wings at 350F for 4-6 minutes. Remove then get your heat to 375F.

Second fry for 2 minutes or until really crispy.

Add to a bowl and toss with sauce.

Salt to taste and ENJOY!
