Notes

Keep heat low when cooking guanciale — you want it to render, not burn. Always remove from heat before adding Pecorino — this prevents clumping. Pasta water (with wine) is key for emulsifying the sauce. Don’t oversalt — Pecorino and guanciale already bring a lot. Black pepper should be generous — it’s a key flavor in Gricia. The wine adds color and depth but shouldn’t overpower.
