2 cups sushi rice

1. Prepare the Sauce:

In a bowl, whisk together the mayonnaise, soy sauce, sweet chili sauce, sriracha, lemon juice, and a pinch of salt. Set aside.

2. Cook the Shrimp:

Bring a large saucepan of water to a boil. Using a slotted spoon or spider strainer, lower the shrimp into the boiling water. Boil for 1 minute until just cooked through. If using fully cooked shrimp, simply warm them in boiling water for a couple of minutes.

Place the shrimp in a bowl and add half of the sriracha mayo sauce. Set aside.

3. Prepare the Sushi Rice:

Rinse the sushi rice in a fine mesh sieve until the water runs clear. Combine the rice and water in a medium saucepan and bring to a boil. Once boiling, reduce the heat to a simmer, cover with a tight-fitting lid, and cook for 15 minutes. After 15 minutes, turn off the heat and let the rice sit, covered, for an additional 10 minutes.

4. Season the Rice:

While the rice is cooking, warm the mirin and whisk in the sugar and salt until completely dissolved. This can be done in a saucepan on the stovetop or by microwaving for about 20 seconds. Pour the sweet vinegar mixture over the cooked rice and gently fold it in, fluffing and tossing the rice until just combined.

5. Assemble the Bowls:

Place a layer of sushi rice at the center of each bowl. Top with a generous spoonful of sriracha shrimp, avocado, cucumber, mango, and edamame. Garnish with crushed roasted macadamia nuts, green onions, sesame seeds, and a drizzle of extra sauce.
