For the Batter

½ cup Carbonated water or beer

Salt and pepper

Vegetable oil for frying

For the Batter

Whisk flour and carbonated water with salt and pepper until a batter is formed.

For the Cabbage

Finely slice cabbage, add to a bowl with salt and pepper, and press and mix with your hands so the salt draws the moisture out.

For the Pickle Mayo

Finely dice 3 pickles and add to a ramekin with mayo and half tbsp of pickle juice, mix until combined.

For the Tofu

Slice firm tofu into fingers, dip them into the batter and then fry in vegetable oil until golden and crispy.

For the Tacos

Toast tortillas, top with pickle mayo, then the cabbage and your battered tofu, and finish with some pickled red onions and enjoy!
