To a large pot of water, add the cow tongue, onion, garlic, guajillo chiles, black pepper, bay leaves, oregano, cloves & salt.

Bring it to a boil, then cover with a lid, reduce heat to medium & cook for around 3 hours.

After the three hours, place the tongue on a cutting board, cut into bigger chunks to make it easier to remove the thick outer layer of the tongue, it’s impossible to eat.

You can shred or cut the meat into smaller chunks for serving. To keep it warm, add it to a skillet with some of the cooking liquid & leave it on a low heat on your stove.

To serve, place it on corn tortillas with salsa, cilantro, onion, lime juice & enjoy 😋
