1 cup of cooked white rice

For the Beef:

1 lb lean ground beef

For the Avocado Mash:

1 avocado

¼ cup of roasted corn & red onion (roasted is optional)

For the Cilantro Lime Sauce:

¼ cup plain greek yogurt
o
¼ cup of cilantro

1 lime juice

2 garlic cloves

1 tsp avocado oil

In a blender add all ingredients for the Cilantro Lime sauce and blend until smooth. Set aside.

Prepare all the veggies for the ground beef. In a medium skillet on medium heat coated with avocado spray toss in the onions, tomatoes, and cilantro. Cook for about a minute until onion begins to turn translucent.

Add ground beef and break it up using a wooden spoon. Once it begins to turn brown add the seasonings. Give it a good mix and cook until beef is fully brown. Add beef broth, turn heat down to low and cover with lid. Cook for an additional 3-5 minutes covered.

On a cutting board add avocado plus all the other toppings for the avocado mash. Using a Steel scrapper/chopper begin to cut into the avocado. You want to chop it up rather than smash it. This method is totally optional. You may add everything to a bowl and combine instead. For the roasted corn & red onion I cook them for a few minutes on a skillet (high heat) with avocado oil to achieve the char.

Cook white rice following package instructions. Once done cooking add a sprinkle of lime juice and minced cilantro and mix it around.
