For the Caramelized Onions:

Heat a skillet over medium-low heat and add the oil or butter. Add the diced onions and a large pinch of salt. Cook slowly, stirring occasionally, for 25β30 minutes (or until the onions are a deep golden-brown and jammy). Set aside and wipe the pan out with a paper towel (keep it heated over medium-low).

For the In-N-Out Style Sauce:

After the onions are caramelized, add 1-2 tbsp of them to a bowl with the rest of the sauce ingredients and whisk until smooth and fully combined. Season to taste & refrigerate until ready to use so the flavors meld together.

For the Toasted Buns:

Add oil or butter to the same pan you caramelized the onions in and toast each bun until golden-brown. Set aside.

For the Mustard-Grilled Burgers:

Wipe the pan out with a paper towel and turn the heat up to medium-high. Once preheated, place the beef balls on the pan and smash them very thin with a spatula or burger press. Season with salt and black pepper. Cook for 60-90 seconds (or until the bottom develops a crust and the burger is cooked about 80% of the way through). Drizzle a little yellow mustard on top of each patty and flip. Immediately place American cheese on each pattie and cook for another 30β45 seconds. Make two double stacks of cooked patties and set aside.

For the Build the Burger:

Spread a generous layer of sauce on the bottom of each bun followed by pickles, lettuce, tomato (seasoned with salt & pepper), a double stack of cooked patties, caramelized onions, and your top bun with more sauce. Serve both burgers immediately and enjoy, friends :)
