50¢ Red Lentil Dahl in a Rice Cooker (High Protein and 50 cents per serving!)

Ingredients

1 medium sweet potato

3 cups red lentils

1 yellow onion

1 tsp turmeric

½ tsp cumin

1 tsp curry powder

1 tsp vegan butter or oil

6 cups water

1 tsp salt

1 tsp sugar

1 tsp vinegar

Directions

Wash and dice the sweet potato. Peeling is optional.

Rinse the red lentils thoroughly.

Chop the yellow onion into chunks or strips or whatever.

Add all ingredients to the rice cooker: sweet potato, red lentils, onion, turmeric, cumin, curry powder, vegan butter or oil, water, salt, sugar, and vinegar.

Stir the mixture to combine all ingredients evenly.

Set the rice cooker to the 'cook' setting and let it run until the lentils and sweet potato are tender.

Once cooked, stir the dahl and serve.

Notes

Note: I filled my 5 cup rice cooker to its very very very max! Cost estimate: $5 USD / 7 CAD with 10 servings, making this 50 cents USD / 70 cents CAD cents per serving 14.3 g of protein per serving! You can cook this on a stovetop too if you'd like.
