3 honey nut squash, cut in half and de seeded

3 tbsp olive oil, divided

1 cup full fat plain greek yogurt

½ cup chopped pecans, walnuts, or nut of choice

2 tbsp maple syrup

Directions

Preheat oven to 425F. Drizzle about 2 tbsp olive oil on the squash and use your hands to coat the entire thing. Season with salt and pepper. Roast cut side down for about 35-45 minutes or until totally soft and the cut side is browning.

I like to assemble on a large tray with the yogurt on the bottom just spooned around, then the squash on top, then I drizzle another 1 tbsp or so of olive oil, maple syrup, nuts, cinnamon, and flaky salt. You can absolutely adjust the amounts here to make it to your taste preferences.
