Ingredients

2 lb 80/20 ground beef

1 cup onion, diced

⅔ cup green bell pepper, diced

¼ cup jalapeño, diced

2 tbsp garlic, minced

¼ cup tomato paste

28 oz crushed tomatoes

2 ½ cup beef stock

16 oz kidney beans, drained and rinsed

16 oz Bush's country style beans

2 bay leaves

Directions

Seasoning Mix

Combine ingredients in a small bowl. Set aside.

Chili

In a medium bowl, combine the ground beef with 2 tablespoons of the seasoning mixture and mix until evenly coated.

Heat a large skillet over high heat.

Form the seasoned beef into one large patty or several large chunks.

Place in the hot skillet and allow it to sear undisturbed for several minutes, until a deep brown crust forms. Flip and sear the other side, then break the meat into bite-sized pieces.

Transfer the browned beef to a plate and set aside.

Reduce the heat to medium-low. In the same skillet, add the remaining seasoning mixture to the rendered fat (adding a splash of oil if needed). Bloom the spices for 1–2 minutes, stirring constantly.

Add the onion, green bell pepper, and jalapeño. Cook for about 2 minutes or until softened and fragrant. Stir in the garlic and cook for an additional 30 seconds.

Add the tomato paste and cook for 2-3 minutes, stirring frequently, until it deepens slightly in color.

Stir in the tomato sauce, broth, bay leaves, browned beef, and beans. Mix until fully combined. Cover the skillet and simmer for 20–30 minutes.
